Recipe - Thai Chicken Salad

This salad is packed full of protein and flavor!



-½ Napa cabbage, thinly sliced -¼ small red cabbage, thinly sliced -2 medium carrots, grated -3 green onion, thinly sliced -¼ cup chopped coriander -2 cups cooked, shredded chicken breast -3 tbsp slivered almonds -½ an avocado -Salt and pepper to taste


-1 lime, juiced -3 tablespoon natural peanut butter -3 tablespoon Low sodium soy or Timari sauce -2 teaspoons honey


-In a large bowl, combine Napa cabbage, red cabbage, carrot, green onion, coriander and chicken breast.

-In a small bowl, combine lime juice, peanut butter, soy/timari and honey. Whisk until smooth.

-Toss all ingredients in bowl with the dressing. Garnish with almonds and avocado.
